10A — The Top of Our Grade
Sea urchin is graded on the colour, firmness and size of the roe lobes. 10A is the highest grade we buy: full, evenly-formed lobes with a clean golden colour and no bitterness. Below that the roe is still good eating but softer and paler, and it is the grade — not the species — that decides whether uni belongs on a sashimi plate or in a sauce.
Short Spine, from Victorian Waters
Short spine urchin carries a richer, sweeter, more custard-like roe than the long spine variety, with a shorter season and a smaller catch. This is Victorian caught and sashimi grade — intended to be eaten raw.
Taste Profile: Deeply sweet and buttery, with the clean mineral finish of cold southern water. No iodine sharpness.
Two Sizes: 100g suits two people as a course; 200g is a shared centrepiece.
Serving Suggestions
Best as it comes — straight from the box with a little of the Yuasa Kurasho white soy, which lifts the sweetness without darkening the roe.
Uni don: over warm rice with a spoon of ikura and nothing else.
With pasta: folded through hot spaghetti off the heat at the very end, never cooked.
